2 slices of Ezekiel whole grain bread
Olive oil spray
2 slices of Swiss cheese
White Albacore Tuna in water
For the Tuna:
¼ Avocado mashed up and mixed in as “mayo”
½ Red Bell pepper chopped small
1 Tablespoon chopped fresh parsley
2 Tablespoon of chopped red onion
5-6 cherry tomatos chopped
Black pepper to taste
1 Tablespoon of Yellow or Dijon Mustard
½ Fresh squeezed Lemon
Mix all the ingredients for the Tuna in a bowl, taste as you go, if you need to add more mustard or lemon, do so.
Spray the pan with olive oil spray & just little extra virgin olive oil for the extra crisp (optional) warm up the pan on Medium heat, put one slice of bread on the pan and a slice of Swiss so it melts to the bread, add several scoops of Tuna, do not pile it too high, you will have to flip it. Put the other slice of Swiss on top followed by the second slice of bread. Press down gently with a spatula. Let it cook for 2-3 minutes. Flip it over to cook the other side for a few more minutes.
This hits the spot when you need some comfort food, but want to stay on track.
No butter, No salt, No mayo, No problem.
