1 cup lentils (green or black)

3 cups water

1 yellow or brown onion, chopped

4 tablespoons olive oil

3 garlic clove, minced

1 teaspoon curry powder


1.) Combine the lentils and water in a pot. Add ½ of the onions and bring to a boil.

2.) Reduce heat and simmer, covered, for 30-40 minutes, until lentils are just tender. Drain.

3.) In a skillet, heat oil, add the remaining onion and garlic. Cook until the onion just starts to brown.

4.) Add onions and garlic to the lentils. Add the curry powder and cook until very tender, about 10 more minutes.

5.) Serve with quinoa and lemon wedges
